I promise that once you make this CLEAN tomato sauce – you’ll never buy a jar of tomato sauce from the store again! It is simple to prepare and can be frozen for quick meals later. I usually make two batches at once so that I have plenty for the freezer. This recipe is from my favorite cookbook – Fixate by Autumn Calabrese.
Grandma’s Tomato Sauce (serves 12)
Ingredients:
2 tbsp olive oil
1 medium onion – chopped
4 cloves garlic – finely chopped
1 (6 oz) can tomato paste
¼ cup red wine
2 cans (28 oz each) whole peeled tomatoes – crush or puree in blender or food processor
2 tbsp agave nectar
1 tsp salt
¼ tsp pepper
3 tbsp finely chopped fresh basil
Directions:
1. Heat oil in large saucepan over medium-high heat
2. Add onion – stirring frequently for 5-6 minutes or until translucent
3. Add garlic and tomato paste – stirring constantly for 2-3 minutes
4. Add wine – stirring constantly for 2-3 minutes
5. Add tomatoes – agave – salt – pepper. Bring to a boil stirring frequently.
6. Reduce heat to low & cover – stirring occasionally for 1 hour.
7. Add basil; mix well.
Then be prepared to LOVE this sauce!
